Happy Australia Day!

It is Australia Day on Thursday (Jan 26th).

I always try to celebrate in some way to keep my connection to my place of birth and to instill a sense of  ‘Australian’ into my half Australian boys.

Usually I do roast lamb with lots of roasted veggies, make Lamingtons or Pavlova and watch an Australian movie with my guys. The next day we would have lamb fritters with ‘sauce’ (ketchup).

This year will be a little different. My youngest is now vegetarian and my oldest declared he

doesn’t like lamb, sorry Mum…

So…. Callan and I made ANZAC biscuits (cookies). I had forgotten how big the batch is, it made a lot!

I handed some out to my yoga students after class last night and some of them asked for the recipe.

Here it is:

ANZAC’s

2 cups oats
2 cups whole wheat flour
2 cups coconut
1  cup brown sugar
1 cup butter
4 T golden syrup
2 tea baking soda
2 T boiling water
Method
mix 1st 4 ingredients in a large bowl
melt butter and golden syrup together on the stove
make a solution of baking soda and boiling water, add this to butter/syrup (it will get all foamy)
mix with dry ingredients
roll into balls and bake 15-20min at 350 degrees

 

Maybe we will have veggie shepherds pie for supper…
